The Asbury Park Press profiles Tom Baker of Heavyweight Brewing in New Jersey, one of the cult producers that keep pushing the U.S. beer envelope.
Business is good and perhaps Baker should be thinking about expanding. He isn’t so sure.
He might instead focus more on coming up with new recipes. “I like the idea of gearing more toward one-off beers,” he said.
And growing too much might force him to hire staff, and Baker is not sure he wants to do that.
“I’m kind of a control-freak,” he said. “Being a one-man show for so long, Heavyweight and me are kind of synonymous.”
